today we frittered.

And it was GOOD.

Priya has this American Girl cookbook that she loves to cook from, and surprisingly every recipe we have tried has tasted great. Today we made Banana Fritters for lunch. We cut back on the sugar, and skipped topping it with powered sugar altogether. I mean, bananas taste like pure sugar when cooked anyway?!  We also cut up raw broccoli and carrots to counter act our fried lunch partner.

I know there will be recipe requests, so here ya go! Besides cutting our sugar (less than half) we also used coconut oil instead of vegetable oil, and coconut milk instead of regular milk.

The only thing I didn’t get was a photo of us stuffing our faces.  And we did.  ;)

like Uncle J.

If you’ve been around this blog at all then you know of the mutual obsession between my kids and their Uncle J.  Recently, he was in town for Brett’s birthday. The morning he was going to leave and was still sleeping, Adin came in my office dressed in J’s hat and coat. I was just smitten. I had to run and grab my camera to capture the sweet boy who just adores his Uncle. :)
